EGG SALAD WITH YELLOW THAI CURRY DRESSING - VEGETARIAN

Preparation time 20 minutes - SERVES 4 PEOPLE

 

1 pouch of Curry Love Yellow Thai Curry

½ cup Mayonnaise

½ cup Greek style yoghurt

12 hardboiled eggs, peeled and chopped

3 scallions washed and thinly sliced

1 red bell pepper, washed and thinly sliced

1 celery stalk, washed and chopped

1 medium cucumber, washed, peeled and chopped

1 medium tomato, washed and chopped

1 potato, peeled, cut into ½ cubes, boiled soft in salted water, drained

½ bunch of cilantro, washed and coarsely chopped including the stems

 

1.     Mix the Curry, Mayonnaise and yogurt together.

2.     Mix everything together.

3.     Serve with crusty baguette.
