CHICKEN AND MANGO CURRY
Preparation time 10 minutes, cooking time 10 minutes - SERVES 4 PEOPLE
1 pouch of Curry Love Red Thai Curry Sauce
3 chicken breasts sliced thinly
½ cup scallions finely sliced
1 to 2 ripe but not overripe mangoes, peeled and cut into thick slices
1 can of water chestnuts, drained and sliced
Optional: 1 tsp Fish sauce
Garnish: basil leaves sliced
Combine all ingredients in a pot and bring to a simmer.
Simmer for 8 to 10 minutes.
Serve with steamed jasmine rice.
